Baked Halibut in Creamy Mushroom SaucE
Halibut is a mild, sweet and meaty saltwater fish and a good alternative for those who are tired of salmon. It’s delicious poached, grilled, or baked with just a bit of lemon or a panko crust, or a baked with a rich mushroom sauce like this recipe. You can also use sea bass, tilapia or cod in this recipe if halibut is unavailable or too pricey.
Ingredients:
4 halibut steaks (approximately 6 ounces each)
2 tablespoons butter
8 ounces sliced mushrooms
1/2 small onion diced
2 springs fresh parsley - chopped
1/8 teaspoon ground pepper
1/8 teaspoon nutmeg
1 tablespoon lemon juice
1/2 cup dry white wine or chicken broth
1/2 cup half & half cream
1/3 cup shredded Swiss cheese
Directions: Preheat oven to 350F
Melt butter in a deep skillet and add mushrooms and onions to sauté lightly.
Add parsley, pepper, nutmeg, lemon juice, wine and cream to mushroom/onion mixture and stir.
Rinse halibut steaks and pat dry. Place in buttered baking dish - skin side down.
Cover fish with mushroom sauce and sprinkle cheese across.
Bake at 350F for 20 to 25 minutes depending on thickness of filet. Fish will separate easily with fork when done.
