Best Blue Heaven Blueberry Crumble:


Blueberries are at the peak of season and they’re big and sweet right now, just waiting to be enjoyed.  This Blueberry Crumble recipe is quick, easy and delish. Add some whipped cream or vanilla ice cream and your family will thank you with a big, blueberry smile.

Ingredients:

Filing:

2 pints blueberries (appx, 4 cups)

2-4 tablespoons granulated sugar

2-3 tablespoons flour

1 tablespoon lemon juice

1 teaspoon almond extract

1 tablespoon lemon zest

Pinch salt

1-2 peaches - peeled and sliced

Topping:

¾ cup flour

¾ cup oats

¼ cup crushed almonds

¼ cup granulated sugar

¼ cup light brown sugar

⅛ teaspoon sea salt

½ cup butter - melted


Directions: Preheat oven to 375F

In a large bowl, gently stir together berries with sugar, flour and lemon juice.  Adjust sugar as required by sweetness/tartness of berries.  Not to worry if some of the berries are crushed. 

Add almond extract and lemon zest to berries and stir gently to ensure fully integrated.

Pour berries into a 9” pie dish and spread sliced peaches over the top.

In a separate bowl, mix together the flour, oats, crushed almonds, sugars and salt.  Add melted butter and stir mixture until crumbly.

Crumble topping over the blueberry pie mixture making sure to completely cover the filling all the way to the pie shell.

Bake on center oven rack at 375F for 30-40 minutes.  As always, watch to ensure the crumble isn’t burning.  Pie is done when topping is a toasty brown,

Allow pie to cool before serving.  Add a dollop of whipped cream or a scoop of vanilla ice cream for a Blue Heaven dessert.

Tip:  Place cookie sheet on lower shelf under pie to catch any spillage.
