jansson’s temptation

Every good Swede loves Jansson’s Temptation, a creamy potato casserole served on special occasions like Thanksgiving or Christmas or birthdays or when company comes.  

A rich and creamy scalloped potato recipe, this dish is easy to assemble but takes some time to slice and layer the potatoes.  The anchovies add a unique salty flavor.  Your guests will never guess that it’s anchovies that make this dish so addictive.

 Ingredients:

2          large onions - sliced

5 - 6    medium-sized russet potatoes.- peeled and sliced thin

6-10    anchovies - chopped

2-4      teaspoons butter

1-1/4   cups heavy cream

Directions:                                                                

Preheat oven to 400F                                

1.      Butter a 3 quart casserole or 9x13 baking dish and layer sliced potatoes, onions and chopped anchovies. 

2.      Repeat layers - potatoes, onions, anchovies ending with a final layer of potatoes. 

3.      Pour cream over entire dish and add dollops of butter on top.

4.      Bake on middle oven rack for 45 mins to one hour.  Stick fork into potatoes to test for tenderness.  

 

Tip:  Place cookie sheet under baking dish to catch the spillage as cream bubbles over.
